A quick, tasty dish that brings out the smoky-savoury flavour of Jill’s hams.

🛒 Ingredients:

1 cup diced Jill’s Sausages Smoked Ham

2 cups cooked day-old rice (cold, preferably jasmine or long grain)

2 eggs, beaten

2 cloves garlic, minced

½ cup diced carrots
-
½ cup frozen peas (or mixed vegetables)

2 stalks spring onions, chopped

2 tbsp light soy sauce
-
1 tsp sesame oil
-
Neutral oil (e.g. canola or sunflower) for cooking

Salt and pepper to taste

Prep Ingredients
Dice the ham, chop your veggies, and fluff your cold rice to break up clumps. -
Scramble the Eggs
In a wok or large pan, heat a little oil over medium-high. Pour in the beaten eggs and scramble until just set. Remove and set aside. -
Stir-Fry Garlic and Ham
Add more oil to the pan. Sauté garlic for 30 seconds, then toss in the diced Jill’s ham. Fry for 1–2 minutes until lightly caramelised. -
Add Veggies
Stir in carrots and peas. Cook for another 2–3 minutes until tender. -
Add Rice & Combine
Add the cold rice, breaking it up with your spatula. Mix well to combine with the ham and veggies. -
Season
Add soy sauce, sesame oil, and return the scrambled eggs to the pan. Toss everything until evenly coated. Adjust seasoning with salt and pepper. -
Finish with Spring Onions
Stir in chopped spring onions, give it one last toss, and serve hot.
